We have wild pigs taking over here Huck..Come take a few home with ya...I know I'm having boneless country style ribs tomorrow...They are already cooked...Just don't know the sides yet. Oh that is today. It is tomorrow..
Sounds like it is time for a wild hog roasts. Went to a few when I lived in FL they weren't too bad.
Best one I went to was when it was cooked in the ground. They dug a hole put good sized rocks in it, put the cut up pig in burlap sacks, wet it down, more rocks, covered them with dirt and built a huge bon fire on top of it all.
My grandpa use to do that up here but the method and instructions went with him to heaven.

Ummm, sounds good, except I don't eat meat. Do you think it would work to substitute eggplant for the pork? I'm not a good cook, so perhaps this is a terrible idea. Please be candid!
What about Port Mushrooms? I like the meaty texture and they would be great with the potatoes..... just an idea....
Tonight I will pull out the chicken....really... I will.... and scalloped potatoes... BROC....corn.... SALAD.... I wasn't to psyched about doing it yesterday but when plans changed I was glad I had a meal in line for today..... SO that is what will be on the menu for tonight....

A very good morning everyone! It looks like rain here so it's back in the house for another day...sigh....Seems every dinner I want to make and post about in the morning ends up getting changed by afternoon. Guess I'll just wait until later to post my dinner idea and keep reading here for something that sounds great.
Good Morning.....tonight I will be cooking up the scallops....something very simple and I do believe it will involve Bernaise Sauce....(I bought some Knorr's and a packet of McCormick's I was surprised that McCormick brand cost a little more than Knorr's; I had always considered Knorr's brand to be a bit "higher tone". (In any case we are talking less than $2.00 )
The lobsters last night were delicious.....and there is just a little left over to add to DP's ramen noodle bowl lunch later today.
Maybe sliced potato with the kraut? and a different side veggie instead of the mash.... hmmmmm
I was thinking potatoes would be delicious in the jazzed up Kraut....and some sliced portabello's would make it a company meal (as long as the company likes kraut). A carrot could be junked in there too--as could some shredded fresh cabbage with the kraut! With carrot and potato and mushroom you wouldnt need a side veggie.....it would be a satisfying, warming one dish meal.
The potatoes (chunked or thickly sliced and the portabello...could both take the longer cooking time that mellows the kraut.
It would be good to add some veggie friendly fat--margerine or olive oil...the fat would marry and carry the flavors. I think the addition of some oil or fat would be essential to this vegetarian dish. Perhaps a little vegetable stock would help it all cook too....If it seems too juicy at some point...the cover could be remove.
Looks like I'll finally get my ham-n-split pea soup fix tonight - woo-hoo! The hambone from New Year's Day made a reappearance from the freezer this morning, and today's forecast calls for split peas and good crusty bread.
Off to work, got another long day of meetings... bleah. But at least there's soup to look forward to.
Elston-that version actually sounds wonderful! Wasn't too sure about the fish and kraut thing myself, but now with all those veggies? Yum.
MwBW-split pea sounds great too. I think I have gained weight just reading some of the posts here.
I am not sure what I am doing for dinner tonight, yet. I have Polish Kielbasa, but no kraut. I forgot it. Noone here but me likes it anyway so maybe just rice pilaf and brussel sprouts.
