What about dicing the tomato and mixing it into the cream cheese before rolling up?
Or stuffing a jalapeno with cream cheese and rolling it up inside the chicken? Then it would want the bacon around it too.... (well, I would )
Jessie - my Pasta Bake - not really a recipe, depends on what's handy!
I do like it to be garlicy and a bit creamy, not too heavy tho. Tonight I softened chunks of red onion and garlic, then added some chopped ham, some tomato sauce (simple tomato & garlic, homemade leftover) a little mushroom soup (saved a bit from my lunch!) and a chunk of velveeta and some grated cheddar. Mix in the cooked, drained pasta - I used rigatoni. It needs to be quite 'soupy' with sauce as the pasta absorbs liquid while it bakes. Topped with more cheddar and mozarella mixed with breadcrumbs - bake at 350, about 25 mins - till golden and crunchy on top!

carlita I like the Pioneer Womans pages too but can't load them at my house so I do it when I go to a friend's house.
Now our weatherman changed the 6-9" of snow to 4-6" but I can tell folks are not taking him seriously around my parts. Usually when they call for a big snowfall everybody flocks to the store not today. We have been told so many times this winter of a big snowfall and didn't get squat. Now watch we will be snowed in.
DD had to have distilled water for her science class so while at the local meat market I picked up some pork chops. Will try them elston's way this week for sure since ya all just rave about them.

Good evening all, too many pages to catch up on! Hope today brought everyone wonderful thoughts and good food. Tonight was beeftips and gravy over noodles and salad from last night.
Thanks all for the suggestions for the chicken. It came out very creamy, a little tangy and moist. The cream cheese does ooze out so I had to "pour" some of it over the chicken. Yum. I didn't think about it but you could mix the diced tomatoes in before the chx got stuffed and rolled. I just put them on top for the last 15 minutes in the oven. The bacon would be a plus I just didn't do that.
