This was actually a few nights ago but I'm having leftovers tonight ...
It's chicken curry (I added onions and broccoli) over rice (just plain old instant white rice, I was lazy ) on half a slice of garlic naan. YUM!
(Wish I knew how to make my own naan ... anyone have any good recipes that can be made in a regular electric oven? Store-bought can get expensive! )
karen this is how I make my naan at home....
2 tsp.dried yeast
1 tsp sugar
1 1/2 tsp baking soda
1 tsp of cumin,sesame or onion seeds
3 1/2 cups Durum or white flour
a bit of salt
4 tbsp melted butter/ghee
3 tbsp plain yogurt
You let yeast rise for 10 minutes.Mix sifted flour,salt and baking soda,make space in the middle and add melted butter/ghee,yogurt and risen yeast.Now knead the dough well just adding enough water to make the dough smooth.Sit the dough in a buttered container and let rise for 3 hours.Knead again and make round even sized balls. I usually get around 16. You can roll the dough balls out either round ( 6 inches)the size of a saucer or elongated.My dough is not sticky at all and I need no extra flour to roll it out on,but maybe it is necessary for you.Meanwhile put the oven on 400 F and put naan on buttered trays (and sprinkle with onion or sesame seeds if you like ) Bake the naan for 5ish minutes You will notice it is ready when the naan has brown dots.

due to fridge death, the salvaged chuck roast has been turned into chili and will keep stewing away in the crockpot until the new fridge is delivered & chills down. So lunch was chili, dinner tonight is chili, lunch tomorrow is chili and probably dinner tomorrow is chili. After that, if there's still any left, it's going in the freezer or in the disposal. I'll decide when that time gets here.
Do I have to say chili cheese fries?
Or their tasty but inferior cousin, Frito Pie?
Don't get mad, Frito-philes, I just adore potatoes in most every form.
Dinner here is leftover slow-roasted tomato pasta and a big green salad.
I had a turkey and ham sandwich, baked beans, and potato salad. I probably won't be able to cook a full meal again until sometime on Wednesday, but am thinking about jerk chicken and homemade potato salad then!
The salad my husband made last night. It was really good but the best part was the dressing he made. He used buckwheat honey, balsamic vinegar, minced garlic and I'm not sure what else. It was so good!
Another rainy dreary day here. I plan on making a batch of chili. I'll serve with a choice of diced onions, cheddar, sour cream, sliced jalapenos and whatever else I can find.
