The rain has stopped and it looks like we are heading for days in the 80s for the next week or so. Thank God. For dinner tonight we are having chicken fried steak, left over awesome curried rice salad and a combo of baby carrots and snow peas with an orange glaze.

2 tsp.dried yeast
1 tsp sugar
1 1/2 tsp baking soda
1 tsp of cumin, sesame or onion seeds
3 1/2 cups Durum or white flour
a bit of salt
4 tbsp melted butter/ghee
3 tbsp plain yogurt

You let yeast rise for 10 minutes.Mix sifted flour, salt and baking soda, make space in the middle and add melted butter/ghee,yogurt and risen yeast. Now knead the dough well just adding enough water to make the dough smooth.Sit the dough in a buttered container and let rise for 3 hours.Knead again and make round even sized balls. I usually get around 16. You can roll the dough balls out either round ( 6 inches)the size of a saucer or elongated. My dough is not sticky at all and I need no extra flour to roll it out on,but maybe it is necessary for you.Meanwhile put the oven on 400 F and put naan on buttered trays (and sprinkle with onion or sesame seeds if you like ) Bake the naan for 5ish minutes You will notice it is ready when the naan has brown dots.
Thank you. This seems pretty straightforward.
I'm wondering, though....the thing I like about naan is it has a kind of greasiness on the surface, as if it is brushed with butter. Is this the case, or does the butter in the dough give it that characteristic?

Usually when you lay the shaped naan dough on the buttered trays you brush some liquid butter on the naan then add sesame or onion seeds if you like and bake it.

My family prefers no extra butter on it.

Pork filet off the grill, potatoe wedges with lots of sage, olive oil and garlic, a big salad; some cheese and flax crackers with the happy hour wine.

I love CPPs - full crust (top, bottom, sides) and peas, I hope.
