Two Taco Bell beef burrito supreme's. They were pretty disappointing. The lettuce and other greens were too bulky, which made for a not so great texture and taste.

ended up ditching my original plans and making chicken miso veggie soup last night for dinner.

tonight, I think leftover meatloaf and mashed potatoes, some sort of green veggie. strawberries with cream for dessert.

My schedule is upside-down (big surprise ), so I actually just finished dinner even though it's a few minutes past 9 a.m. my time.

Since my favorite local Chinese restaurant closed , I decided to try making my favorite dish from there, Hunan beef, myself. I even bought oyster sauce at the grocery store the last time I was there, in anticipation.

I basically used this recipe: https://www.dinneratthezoo.com/hunan-beef/ . I used somewhat different veggies -- I didn't have celery, but I DID have water chestnuts and onions and carrots, so I added those ...



In the picture above I had not yet added the baby corn -- that goes in just before you add the beef (back). Here's the pan just after I added the baby corn, the beef (flank steak), and the sauce ...



And here it is in my bowl with plain old instant white rice ...



It was really good, although needed more sauce -- I will keep that in mind the next time I make this (probably later this week or some time next week!). But I miss my local Chinese place ... I hope they are able to make it back when this horrendous pandemic dies out ...

Tonight herb frittata with garlic buttered naan,homemade plain yogurt and tomato salad (red onion,cilantro,lemon juice,olive oil,salt/black pepper).To drink a glass of hot turmeric ginger tea.For dessert 1/2 a pink grapefruit.

olive oil or ghee
eggs
green onions,garlic cloves,turmeric,salt/black pepper,cilantro,dill,curly parsley,walnuts
flour
serve with some plain yogurt and chapatis or naan

I feel the same way. One year ago, I could never have imagined all of this. Any part of this.

Now, the food I cook, when I cook, is so boring. That's why I haven't posted that much, as of late.

I am uninspired today, so I took at a couple of steaks. DH got them when we were at Walmart, and I've eaten some Walmart meat before, and no likey. I'll try it, but if I don't like it I'll finish up some of the leftovers. We have a Costco run late next week and I like to eat up as many consumables as possible before restocking.

It will either be chicken parm, or leftover feta turkey meatloaf. Leeks or green beans depending on which we choose.
