Yesterday we ended up with steaming bowls of vegetable soup with chunks of smoked ham an buttery grilled cheese sandwiches. Soup was cooking for freezer lunches and smelled great

Maybe mini meatloaves with lots of onion/carrot/potatoe wedges slowly baked in the oven. Baked apples for desert. Do not hold the icecream!

All of that sounds amazing. I'm saving that recipe - it's right up my alley when it comes to easy and delicious meals.

Youngest grandson turns 3 today so son, DIL and g-son are coming over after work and we'll just do snacks - veggie tray, chips and dip, and cheese and crackers. If they're hungry we have leftover gumbo or lasagna. DH and I will have eaten the better part of our calories earlier in the day, so we'll be fine with the snacks.

Cold here this morning and we haven't even had breakfast, but I am about to poach us a couple of eggs. Obviously we will skip lunch; early dinner will be ready while we are watching the news: now I have to decide to I want to cook the roast (rump) as daddy used to on the rare side or do I want o fix it as a pot roast. either way it will be in the pressure cooker, with potatoes. We will have have steamed vegetables as well.

A version of chicken pot pie from the left over roasted chicken. I have some of that fluffy pastry in the freezer so that will be the top, probably no bottom crust. I'll put in what I have, carrots, collard greens, zucchini, onions, peas and whatever else I can find. Maybe roasted brussel sprouts on the side.

Italian meatballs and Macaroni and cheese. I had a craving for Velveeta shells and cheese. I usually make mine from scratch but tonight it's easy peasy. The meatballs will be homemade though.
