Trying to think of something different to do with a small boneless pork roast and decided to try coating with this apple mulled wine jelly I've had forever. Added some sliced apples while and then took the sauce left in the pan and added a bit of red wine and reduced then some butter to smooth... it turned out wonderful for off the cuff!
Pot roast with potatoes and carrots in the crock pot. Green beans sauteed with my new favorite seasoning, Raspberry Enlightenment, and sprinkled with marjoram.
With all of the tempting posts lately, I've decided to post my unappealing (to most) meal plan of the day - juice. As the weather gets colder, most people start craving the warm, heavier comfort foods. My body is craving a break. I'm not that hungry lately and usually only eat once a day. Since that's not good, and my body is asking for lighter fare, I'm going to use my juicer instead of my stove and juice fresh fruits and veggies for awhile. I have today off and will be hitting the farmers market for fresh carrots, apples, kale, etc.,
I'm committed to bake a pie for someone from the south who misses home so I've decided to bake a sweet potato pie with a pecan pie topping. That will be the last use of my oven/stove for awhile.
ETA: I just noticed that this is my 1,000th post! I think I'll celebrate with a lasagna! Wait.... doh!
No one is going to believe this, but last night for the first time I made a tuna casserole. Results.....not bad. But, then again I never had it before
