I bought about 50lbs of Salmon back when I found out it was getting scarce so tonight we are having it with scalloped potatoes and what ever veg is in the front of the freezer.

Wow-I made pepper and egg subs (a NY/NJ fave) with thin sliced Idaho potatoes fried with butter/olive oil/onions. I'm in heaven. Even our realtor just stopped by and said whatever you're cooking keep doing it for showings.

Without the peppers I've always known it as tortilla espanol, amazing how good something so simple can be. I usually like it at room temp with a drizzle of olive oil and maybe some roasted red peppers on the side.

Sounds like a plan for tomorrow's dinner

I haven't had that in ages, used to be one of my father's favorites! Maybe that will be on the menu here soon!

When I was a kid, when my aunt came to visit (she had a car) we would go to a drive up resturant that had "dynamite sandwiches" on the menu; They were Green Pepper strips and egg seasoned with chili powder. We loved em and I still try to make them all these 60 years later....but dont have the proportions right.

Good morning Elston-another early bird day for us!

Mine weren't on the NY/NJ scale but they were so good and it was an easy meal. DH said it was so good to have something out of the norm. He's already planned one of our meals when we're at our daughter's-good homemade hot dogs from our former German butcher-the kind that snap when you bite.

Tonight another easy one hot roast beef sandwiches and fries covered in gravy.

Up in NH french fries covered in gravy is a French Canadian dish! It is called poutine. Poutine - Wikipedia, the free encyclopedia There is a resturant in Manchester that is well known for this dish.

For franks I have been getting Kayem Deli style franks.....they have the snap but the seasoning isnt as good as what you're getting at a real german butcher shop I am sure.
