Every once in awhile, it's either 'forage' night or 'garbage can soup.'
If we 'forage,' each just goes to the pantry and refrigerator, and helps finish-up those things that make for loose odds-and-ends -- the last of the chili, a tupperware of mashed potatoes, the lone slice of quiche, whatever. It's sort of fun to see what everyone's plate looks like when we sit down to eat. I always call dibs on the salads/salad makings and fruit.

I remember when I was a kid (long long before microwaves); Mom would put water in a big ol roaster pan and put in little dishes of all the left overs, (long before Glad plastic storage bags and containers too) in the roaster and set it in the oven to warm them all up; she might make some biscuits or soup or something to go on the side or if the left overs were plentiful that would be it for supper. That was one of our favorite meals.
In my old Vermont Cookbook I found a couple of basic, easy supper recipes--here's one that might be good. It sure would be easy to put together if you were going to be in a rush at supper time....could be all ready for the oven. Simple meal.
Chicken Casserole
2 cups cooked chicken bones removed
4 cups cooked rice
2 cups cooked celery
1 cup cooked mushrooms (certainly could be canned)
1 cup chicken stock (certainly could be canned broth)
salt and pepper
bread crumbs
Place layer of rice in bottom of a large casserole, next layer of chicken, mushrooms, celery, then another layer of rice. season. Top with crumbs, dot with chicken fat (or butter now a-days) add stock. Brown in 375 oven for 30 mins. (I would guess if you had prepared it ahead of time it might take longer to get the chill of the refrigerator out of it.)
I don't know what I am going to fix, had those cube steaks floured and fried with brown mushroom gravy and mashed potatoes and broccoli last night. Maybe fish tonight?
Tonight we're having pot roast with red potatoes, carrots, small onions, parsnips and biscuits....the house is already starting to smell good!! I love this meal--so good and so simple and very little clean-up!! YES!!
Okay, we didn't go out yesterday BF was too tired after a long day at work, so maybe we will tonight. No idea what is in store for dinner....I have to do some grocery shopping today.
We just had one of those Bertolli frozen pasta dinners with garlic bread last night......
Nic-that's how we all learned-you'll do fine with the meatloaf. And Elston's sounds great-if pressed for time you could get a rotisserie one from store.
Here's another one that's easy-
Butter casserole dish
Sprinkle packet Lipton onion soup
Sprinkle layer of uncooked rice
Put chicken pieces on top
Mix can cream of chicken soup w/soup can of water
Pour over
Cover, bake 350 for 1 hr.
