I am making split pea soup from the ham and bone from yesterday, with dollop of sour cream in it, with cornbread and a salad.

Thanks for all the advice Elston and everyone else. I appreciate your support during this experimental period in my life where I am just hoping not to poison my family! LOL

I will try the baked mac n cheese, probably not the taco though...don't like the way they look or smell.

As for the meatloaf....well...it was ok. I'm not sure I cooked it long enough so parts of it were a little too moist. I'm going to try again cooking it for longer....but for the most part no one got real excited. I think we may not be meatloaf people.

Tonite....chicken parmesan I think. If not.....some kind of chicken cuz thats what I took out. lol

I was set on cooking lasagna but after reading all these good dinner ideas I started getting hungry--problem is--I'm hungry for all of them!! You all go out and make so many good things. Now lasagna sounds boring! But it's already afternoon so I'm probably stuck with it. Hubby said he'd like it. That's funny nic29....I was considering chicken parmesan tonight too earlier today!! Maybe later on in the week for us!

Have you all tried the Barilla no cook lasagne noddles? They make the process of making lasange so much easier and tastes great-lighter than boiled noodles. I saw a recipe using them for manicotti yesterday on America's Test Kitchen and going to try it soon.

lovelovelove those! so easy to use, but, I have a question..... how did they get them to roll for manicotti? They are brittle until you cook them. Would love to know so I can make manicotti, and such, love them, but they are such a pain to stuff!

Chicken breasts breaded with flour, egg and onion soup mix - baked. Salad and wild rice. If you haven't used onion soup mix to bread things - try it. It's really good and cheaper than pre boxed breading mixes.
