Back on the East Coast now, and DH is making roasted chicken for dinner. I'm still pooped from all day in airplanes and airports yesterday.

Hamburger steaks in brown gravy with sherry, mushrooms and onions; mashed potatoes, and green beans. Sweet iced tea to drink.

You've really got my mouth watering over the juicy cheeseburger and steak fries! Why did you have to say "fries." I swear after Lent I'm just going to have a big ole bowl of mashed potatoes for lunch.

Lots of leftover salmon from a guest, so it'll be chunked and tossed with noodles in a sambal and honey dressing. I'll add in shredded carrots, some sauteed leeks and cilantro.

Take-out tonight - Mexican. Chicken burrito with guacamole and sour cream. The best part is the salsa bar - 3 types tonight: the regular chunky type of tomato & onion, then the more blended type of medium and spicy (smoked).

Well, the burritos ended up being a skillet pasta dish with shredded chicken and sautéed mushrooms. It was simple and quick but very tasty. The kids hoovered it up like they hadn't eaten in a week.
