I made two meals today so I don't have to cook for the next couple of days. Tonight is chicken cordon blue with cauliflower bake and left over orzo with spinach. I also made a meatloaf for another night.

I bought stuffed pork chops from the meat counter at the supermrkt.....nice big thick ones (corn brd stuffing); I also got collards to cook long and slow this afternoon and I have an acorn squash.....maybe I will bake that with brown sugar spice and butter.

If I don't poop out.

I have a big pot of gravy on the stove with San Marzano tomatoes, red and green peppers, spinach, onions, mushrooms, garlic, and seasoned cube steaks. Serving it with some type of pasta.

I made a big pot of ravioli (beef with pork), 5 cheese sauce, Italian bread and big salad. Ice tea to drink. Tiramisu for dessert.

God I love fresh collard greens. That's one thing that you rarely get in Montana.

A year ago the local market had a bunch of fresh collard greens and I bought about 1/2 of what was on display. I also bought some fat back and pork bones. I was in the checkout line (the checker is a guy from Kentucky and he knew I was raised in a southern home) and the lady behind me says "Oh you have turtles?! That's what we feed to our turtles!"

The checker was laughing and said "Lady- he ain't no turtle- he's gonna make heaven in a pot".

Rotisserie chicken with a brown sugar pineapple glaze, BBQed pineapple, garlic mushroom rice pilaf, red onion cucumber salad with balsamic vinegar......and sweet tea.. happy eating
