Sautéed scallops, which I then put in a 500 degree oven for a few minutes. Perfect. Topped with sautéed spinach infused with my favorite Serrano chili honey balsamic. Unsweetened iced tea to drink.
I am making my version of chicken fricassee, or at least chicken in a brown gravy, made with the "trinity of the kitchen" and seasoned with thyme and poultry seasoning and bay leaf and garlic.
I have some left over rice from last night..but is it enough??? Also cooking up some fresh green beans...my favorite stand by vegetable.
I am going to have baked tilapia, mashed cauliflower and potatoes and some green beans or maybe sauted okra. I can't make up my mind if I should please the spoiled brat or fix what I like??
I took a pre-made meal out of my freezer for tonight's supper as I was out most of today.
Sweet and spicy chicken. Grilled boneless chicken cutlets, cut up into bite size pieces in a sweet {brown sugar and honey} and spicy {a couple whole hot chili peppers, garlic, low sodium soy sauce, Frank's Rooster Sauce, crushed red pepper and a bit of salt} with snow peas and whole roasted cashews and a tablespoon of cornstarch to thicken the sauce. I always make it with extra sauce, the crew here at my house likes to have extra sauce to spoon over their rice. Tonight it's long grain brown rice, it's already in the rice cooker and the table is set. Early dinner tonight, everyone always has somewhere to go on a Thursday night!
Iceberg lettuce for the salad tonight, with Asian dressing {rice wine vinegar, ginger, garlic, low sodium soy sauce, green onion}
2 pieces of roast chicken with brown rice and steamed broccoli.
Ha! We're having store rotisserie chicken, wild rice and cooked asparagus.
