Dinner tonight was some of the best chicken tamales I have ever eaten! My friend's husband made them for the 1st time, which is almost unbelievable to me because they were that good...
I was initially going to share them with my lunch friends at work, but decided to save them for myself. I'm so glad I did. The masa (dough) surrounding the filling was light, airy, fluffy yet firm and perfectly seasoned as was the filling which was moist, but not soggy. I didn't need to use salsa or hot sauce, it was perfect on its own.
Tonight we have a spicy red kidney soup made from olive oil, sauted onions, ginger, garlic, green chilies, turmeric, coriander and garam masala powder, salt to taste and some fresh cilantro from my garden. With it chappatis made from Durum/bran flour and lassi. For dessert a nectarine Cobbler as you call it and a cup of Darjeeling tea
Making hubby grill tonight (everything is ready, he just needs to fire it up): chicken wings (with homemade sauce that his dad makes for us in gallon jugs), bacon wrapped jumbo shrimp, broccoli slaw, and watermelon/vodka slushies and apple pie for dessert.
