Grilled Mahi Mahi with tomato, avocado, jabenero salsa. Red cabbage slaw with a honey lime cumin dressing. Farrow with garlic and cilantro.

Flan for desert.

Been out of the kitchen for a few days - new floor put it. Thought I'd try something new.

Fried catfish - I love eating that crispy tailfin
Baked potato - butter and sour cream
Coleslaw - sweet and creamy

Thanks for all the birthday wishes. I thought my dinner was the best, but DH did not think it was an adult dinner (really?) so we are going out on Saturday night.

My dinner tonight is my special spicy chicken broth with spinach and scallions and a bowl of fruit salad for dessert.

I made the eggplant that I mentioned in an earlier post, and I am reviewing it because two people told me they wanted to make it. It smells delicious but I think eight hours in the crock pot was too long. My husband really liked it and asked me to make it again, but the texture was totally soft. I was expecting there to still be some substance to the peel. when I make it again I may only cook it for six hours. Also, 2+ pounds of baby eggplants is only about three main dish servings after it all cooks down. I was expecting major leftovers.

If you can't revisit your childhood on your birthday, then when's a good time?

We had supermarket fried chicken, a salad, and strawberries & vanilla ice cream for dessert. The chicken was not that great; by mutual consent, we're going to chop the rest of it into our lunch salad tomorrow.
