It isn't a lot of moisture and when I made it last night I added about another 1 1/2 tsp of olive oil.

As soon as the crockpot is out of the dishwasher I'll be making chicken soup w/spinach and carrots. I've got some sort of cold/sinus infection/chest congestion going on and feel like crap so just throw stuff in the crock pot and it'll be done when hubby gets home.

Had planned for dirty rice and vegetables, but I am dragging today (some kind of little bug, maybe?). I had to go to the drugstore so I took the lazy way out and brought home some Bojangles steak biscuits. Time for a nap now and I'll be back on later tonight!

Low fat shrimp scampi (chicken broth & a little white wine with corn starch slurry - instead of butter & olive oil) adding some peas and garlic over whole wheat angel hair.

I made chicken fajitas tonight. Chicken with lime juice cooked in olive oil. Added peppers and onions, crushed red peppers and chili powder.

Ate with salsa and cheese.
