Hot pot is not as popular in Southeast Asia compared with East Asia. The reasons are very obvious.

Most european cuisines are very unpopular in Asia with the main exception of Italian.

Most east Asians do not drink western wine oftenly, and only the residents living in bigger cities drink more coffee and western tea.

A mainly wheat based diet is not interesting for me. I would want both wheat and rice products plus also some other food on a regular basis. Milk is much less important and maybe considered not healthy in East Asian societies.

I like this part. I am allergic to milk and to all dairy products, so for me it is often quite difficult to eat at a restaurant (I can't neither eat the mozarella on the pizza, and here in my region most of recipes have butter and/or cheese in them). Maybe I should try with some asian food...

It is good to know the garlic sauce is optional.

Well, I don't like lemons with seafood in general, but that's only me I guess.

As an East Asian, I'm not sure if I can agree with you.

World Wine Consumption by Country 2014 TradeDataAndAnalysis

China is #5 on this list, Japan is #16, and South Korea is also on the list. To me, these three countries can represent East Asia.

As for milk, I used to drink a small carton of milk in elementary school and junior high everyday.
