I'm going to take steaks out of the freezer, since it's still BBQ weather here. (High should be around 100 degrees.) Have a nice big head of cauliflower to go with it. Not sure yet what else.

100! Whew! I`m hoping those days are over for the year here.
Its another seafood night tonight. Shrimp, crab legs, fish, salad.

Chicken breasts here for dinner tonight. Wish I had all the ingredients here for that chicken dinner crazy made...sigh...will have to settle for something else. We do like the one lacey is making, egg dipped and rolled in onion rings so I'll probably make that tonight. It looks like we're going to have to venture out today, hubby is out of scotch. A good reason to go to town! Maybe I'll stop and pick up the items needed to make crazys chicken----oh my, decisions, decisions!!

How do you fry boneless, skinless chciken breasts? I always thought it couldn't be done because there is no skin to fry....just egg dip and flour maybe? Any ideas here??

LOL....yep, this can be used in many different ways, and does tend to serve us well when it comes to saying things that are not very nice! Just add the "Bless your heart" as mentioned before and all is right with the world!

I think that would work....I wouldnt go for crispy southern style.....I am afraid they would dry out.....I THINK I would skip the egg and just flour them and cook in butter and olive oil.....not too hot....maybe cover the skillet toward the end to make sure the heat gets in and cooks them thru. When done you could deglaze the pan with a little stock or white wine for a light sauce, to spoon over them.

I have no particular reason for that advice.....but I bet it would work.

The reason I am asking is.....hubby saw that Throwdown with Bobby Flay one night and he was doing it with this guy who makes fried chicken and waffles covered in syrup. Sounds a bit strange to me but hubby wants to give it a try. Since I have the chicken but it's the boneles, skinless I wasn't sure if I could fry it. I don't have a waffle iron so we'd have to settle for pancakes--oh well. I'd like waffles better I think but since I'm having to rewrite this whole recipe anyhow for what I have on hand what the heck! Ha!

Cyn do you have buttermilk? If so hit it with some tabasco and marinate the chicken. Remove and wipe off excess. Dredge in flour and pan fry-should work. Probably better to wait til you have chicken "on the bone".
