Made a turkey loaf....added roasted red peppers, for the first time. Going too make cold sandwiches, with it.

I think I’ll make a pizza tonight. Italian sausage, fresh mushrooms and tomatoes, fresh basil and onion.

Vegetarian casserole, mostly leeks, some carrot, kale & potato, topped & layered with mozz & parm. Will roast a fennel for a side.

Light brats, simmered in local craft beer, then grilled with carmelised onions and beer broth. Home Made potato salad with celery, carrots and green onions. I made it with Duke's light mayo, apple cider vinegar, and sour cream with fresh dill. Amish pickled beets and artisan whisky dill sauerkraut.

This meal cried out for good beer, and I answered it's call with a local craft beer, from Modern Methods brewery. https://modernmethodsbrew.com/

For desert, baked apple stuffed with nuts and granola, with a maple cinnamon nutmeg glaze.

Took the easy road to dinner ... bought a 2/3-cooked pepperoni & mushroom pizza from my local Market Basket grocery store. (Love their pizza but they tend to overcook it -- I HATE pizza that is burned on the bottom.) Another 5 minutes at 450 degrees (the max) in my convection microwave and it was just about perfect ...



Their pizzas are GIGANTIC. That's a regular-size Fiesta plate with a 1/8 pizza slice on it. I typically have 2 of those 1/8 slices for dinner and I am STUFFED. Tonight I had the pizza with a vodka-orange-mixer-and-lots-of-ice drink, and everything was delicious.

And after reading others' posts I realize I need to "check in" more often! I may be RETIRING in a year (that's another thread) so I will have more time, LOL!
