After spending my afternoon at the surgi-center with my aunt, she was STARVED and wanted to take me to PF Chang's. So I had spicy eggplant, chicken lo mein, and a tofu dish, the name of which I have forgotten. It was all delicious. All the more because she treated!

I had some twisty pasta and leftover spaghetti sauce and ice cream for dessert

S.O. had a grilled ham & cheese and a mug of cream of celery soup.
Still trying to get the gout flare to go away...going on 3 weeks now.

Our goodbye-to-carbs dinner was my adaptation of Cacio e Pepe (pasta with pepper and cheese--I added a bit of garlic- and red pepper flake-infused butter to the pasta before adding the cheese and pasta water. Sounds weird but it was crazy good, sort of Italian mac n cheese), and garlic-roasted broccoli tossed with lemon zest and lemon juice. I miss carbs already lol.

Beef stew. Only thing that irks me is I forgot the onions.

Browned the beef in butter and garlic, seasoned it with italian seasonings, salt, pepper, and parsley flakes. Before it was finished being browned, added onion. Once browned, added a cup of stock from the last time I made beef stew (I remove about 1c of liquid from each batch and freeze it). Added in 5 cups water, potato, green beans, and mushrooms. Meanwhile, made a roux with butter and flour to add to it to make it thicker.

Letting it simmer for a while

I hope that gout will go way soon - it seems like a long time for suffering with that!

Hi satx, Nomad & Kats boy that felt good typing those names.

We are at 14º with wind chill -7º so I'm browning an arm roast to make veggie soup with. It will heat up this farm kitchen and make the house smell amazing all day to boot.
