Lean Cuisine lemon chicken and a side of steamed mixed vegetables. Hubby had chicken rice soup.

All I know for sure is: we will be eating Asparagus. In fact we will be eating it for the next week, daily I think. We have so much of it. Also fruit salad, before everything spoils. As for the entree, heck I have no idea. I am guessing I will take something in the way of pork out of the freezer. I do a menu, usually on Mondays, so I haven't gotten around to it yet and have a couple of morning meetings, so my mind is all filled with meeting junk....

Rump Roast (I have never cooked one before). I think I found a good recipe and I bought a meat thermometer that stays in the oven....to make sure I don't over cook it. We like it on the rare side of med. rare.

I also have asparagus....it must be in season....like nmnita we have been having it a lot! Halved red potatoes cook with the meat. If all goes well....we will be happy campers.

Tonight we have chicken breast in white wine sauce with rice and a vanilla pudding (Dr Oetker) with fresh pressed warm orange juice.

4 boneless thin chicken breast
salt and black pepper to taste
1/4 cup butter ( I use a bit less butter,otherwise it is quite heavy due to the combination of butter and sour creme)
1/3 cup finely diced red onion
1/2 cup dry white wine
1 cup sour creme
1/4 cup finely cut chives and 1/4 cup sliced black olives

Rub chicken breast with salt and pepper and saute chicken breast in the butter for 3 minutes on each side until golden brown. Next add red onion and white wine and bring to a boil. Cover and let simmer,cooking for another 10 minutes. Remove the chicken breast in a casserole dish,cover and keep warm in the oven,while stirring sour creme in pot with left over juice and heat up,no boiling,but whisk to make sauce smooth. When ready to eat serve sauce over warmed chicken breast and sprinkle with chive and black olives and serve with rice.

Tacos! We are having soft and crunchy homemade tacos-- with Spanish rice on the side.

The ingredient list for the tacos will be simple and shorter this time:

ground beef
taco seasoning mix
Shredded extra sharp cheddar
roma toms
diced white onion
iceberg lettuce
salsa and taco sauce

I decided on my meat: we are having roast pork, now let's hope it defrosts in time. It is a small loin so won't take too long to cook.

Tonight hubby is having 2 grilled chicken breasts and mashed potatoes-(He's lost 12 lb. so far by eating less.) I am having 1 grilled chicken breast with mashed potatoes, and steamed mixed veggies.
