I think I'll make light Chicken Parmesan...no crumbs, low fat sauce and fat free cheese, with leftover lemon spaghetti and a salad.

We're going Italian tonight - lasagna rolls (stuffed with ricotta, spinach and prosciutto) topped with my husband's homemade marinara sauce (one of the few things he makes), zucchini ratatouille and cannoli cake roll for dessert.

Tonight it's butter-lettuce salad with corn, tomato, red onion, avocado, feta cheese sprinkles, and steak ... yum!! I bought a couple of avocados that are getting soft so it's time to use them!!

I am going out to church for a program tonight...I have a Willow Chicken Pot Pie I might make before I go. I have been wanting a pot pie....and my DP doesn't like them so its been a long time between pies. He isn't home this weekend.

Tonight I'm baking and stuffing some sweet potatoes with curried yogurt and crushed pineapple, collard greens cooked with tri-colored peppers and a cous cous pesta pilaf.

A glass of Merlot for us. I like DH's cardiologist! She loves red wine for her patients! Not mass quantities, of course.

Blueberries and cantaloup for desert.
