It has been a long day cleaning up the mess after a horrible hail storm yesterday, so it had to be something quick and easy. Ended up making nachos with leftover black beans, shredded chicken, and lots of cheese topped with homemade salsa and guacamole. Peach smoothies to drink. It definitely hit the spot. More garden clean up tomorrow...and the next day...and probably the next. It's going to be a long week.

So sorry about your garden, Random, that was quite a hail storm. We got all rain here west of University but it was so intense I was sure hail was happening somewhere. My rain gauge said 2 inches and then the news last night showed the intense damage east of us. It sounds like you had a great comfort food dinner after a hard day.

Mine was a cheese enchilada from Trader Joe's which I topped with some tasty chopped home-grown tomatoes. A smoothie would have hit the spot. Good luck on the yard cleanup!

Had soup tonight- easy meal cause I'm working on a weekend dish that needs to start tonight. I'm trying to make for the first time Chinese 5 spice roasted duck. I have some whole plucked mallards saved up from last years season, and to kick off the start of hunting season I always like to try some new recipe. This is the description-

"This version of roast duck is from China’s Guangdong Province. Through an elaborate but uncomplicated three-step process, the bird is marinated, then blanched, basted and refrigerated and finally roasted. The sequence results in a flavorful bird with crisp skin and succulent flesh. "

Basically stuff the bird with Smashed green onion, garlic and fresh ginger. Soak in a marinade of soy, rice wine, black vinegar, little sugar, some 5 spice.. Marinade 24 hours..

Then blanche, baste with honey, a little this, a little that- store 24 hours.

Then it's baked crispy first, then heat down to finish off. Carve and serve with hoisin sauce.

I'll post up a pic of the bird when it's done!
