Woke up to a chilly 46 degrees this morning in Miami so the Caldo Gallego is in the crockpot on low and slow. Will have it with some sort of crusty bread and some Spanish red wine.

Black beans slow cooked with onion/carrot/garlic/ham bone, baked chicken, cornbread, cabbage, pecan pie. It is wet, gray and foggy outside. Comfort food!

This might be breakfast food for some people but I prefer when possible to eat light dinners a few times a week.

Tonight I am going to grill up a London broil, slice it up nice and thin and serve on corn tortillas with a homemade mango salsa.

Since I was the only one who ate the beef liver last night, we are going to have seafood tonight:

Steamed clams and mussels in butter/garlic and sake, coleslaw, a loaf of crusty Italian bread (baked by my father-in-law), a decent Chardonnay, and mango sorbet with mini shortbread cookies for dessert.

Here you go...Mango Salsa Recipe - Allrecipes.com I like to add diced red onion to it.
