Eggplant lasagna. Green salad with tomatoes, lettuce, cucumbers and red onions. Olive oil and red wine dressing. A nice local cab. DH just brought it home now.

I miss my Albertsons. All ours were taken over by Haggen's and are failing.

Leftover pork roast chopped up with hatch chiles and onions for tacos. Fresh hatch salsa too!
