Tonight we're having Chicken and Seafood Paella, bruschetta, garden salad and the Coconut Italian Cream Cake that I made last night for dessert.

We'll be having more of the vegetable beef soup that hubby made yesterday. There will be a spinach salad on the side.

And a visit to the local cupcake shop means we can have a treat later.

Mushroom spinach quiche with a potato crust. (left over mashed potatoes work well)

Kale salad with cashews and Mandarin orange sections with a creamy sweet and salty dressing. Hot tea.

We had pork chops, roasted potatoes and kale salad. So, I am old, but I have not had kale, to my knowledge, ever, so I felt like it was time. Leave it to me to get on the tail end of any trend.

I'm not much for pre packaged salads, where you pay $5. for a dollars worth of stuff, but I figured it would be a good intro to kale. Anyway, it was good.

I'll be trying kale in more salads, for sure.
