I would rep everyone here all the time for so many wonderful ideas and so much support---but alas---they keep telling me to spread the love! But I do appreciate each and everyone of your contributions here and just for the all the great friends we have made. Each and everyone of you has made a difference!!!!!!
My game hens came out really delicious last night. I had never cooked them before and bought them on a super sale. I roasted them in the oven with a orange wedge tucked inside the tiny cavity, to keep them moist; I basted with butter and salt and peppered them. I made a sauce for glazing at the end of the cooking time, using a Jamaican jalepeno pepper jelly and white wine thickened just a tad with a butter and flour roux; I also made a japanese squash called "Kabocha" which I learned how to fix when I was in Japan. I cut the game hens in half and plated each half portion with the rice and spooned my sauce over the bird and rice. The combination of flavors was really a winner.
No idea for tonight.....(we are trying to negotiate a real estate transaction and if we get good news today.....we may be heading out for a celebratory supper.)...but more likely I will be checking out the freezer later today for an idea.
Thank you all; it is probably very premature of me to be optimistic. No calls yet. So lets just go back to cooking and I will try to find something for supper.
I do remind myself that living in sunny California in a beautiful home....isnt the worst fate that could befall me! Each day holds its own share of joy and sorrow, and I am truly blessed.
It's FRIDAY!! Woo hoo! I am ready to blow off some steam -- it has been a loooong week at work. I think we might hit up happy hour and eat bad-for-you appetizers and have a couple glasses of wine for dinner....
Didn't you have Monday off? I don't know that you get a couple of glasses for a 4 day week. (but if I remember right, sometimes a 4 day week was more exhausting than a regular work week.) PS: I am so over working
