I'm very happy with the supper I put together tonight...especially since I walked in the kitchen at 15 till 6 and thought---"What can I make at the last minute?"

I had an 8 oz boneless Smithfield ham steak. I mixed half a can of fruit cocktail with juice with about 1 TBL spoon of cornstarch and warmed it in the skillet with a squirt of maple syrup.

I steamed a bundle of asparagus and serve it with left over cheese sauce left over from last weekend's breakfast

Then I sauteed some fresh sliced mushrooms and onion in olive oil and butter and sprinkled Lawry's seasoned salt.

Our salad was a fresh pear and a ripe avocado cut into 4 portions served with homemade blue cheese dressing and candied walnuts.

It was very good and very economical.

Simple dinner tonight of cheese, Triscuit brown rice crackers (sweet onion flavor), and an orange.

Dinner was a huge salad and I added roast turkey, baby swiss, and cranberry sauce and topped it all with bleu cheese dressing. Unsweetened iced tea to drink.

Marinara sauce with lots of garlic served over spaghetti with meatballs and fresh Parmesan cheese. It really hit the spot.

Thursday is taco night at Jrsygrl's house. I want something sweet, so I'll make some sort of cake, but not sure yet what kind.
