It's going to be cold and raw again today. I'm making my Mom's recipe for Scottish Mince, but I'm not sure if I will make it as a stew or to serve it with mashed potatoes ( which is my favorite)

Tonight we have creamed cottage cheese with spring onions,caraway,salt and black pepper,decorated with tomato slices and served with boiled potatoes and melted butter. To drink sour lemon water. For dessert a fruit salad with apple,banana,pear,orange slices,Pomegranate,roasted almonds,lemon juice,vanilla sugar and a shot of Cointreau.

I think I will keep it simple tonight....perhaps fried kielbasa....we'll see what develops.

Reporting back about last night's dinner menu choice.

I decided to have shrimp and steamed mussels.

I also had a salad, bread with dipping oil, and key lime pie.

All in all pretty good meal, but must admit, I do not think their pricing is justifiable.

Breakfast Casserole for dinner tonight.

Breakfast Casserole

Spray 9x13 pan with cooking spray.
Line with biscuits (the pre-made refrigerated ones that you ‘pop’ open)
Sprinkle with shredded Monterey Jack & Colby cheeses
On top of this, add whatever meat (cooked and drained) you prefer: Bacon, ham, sausage or sliced (thin) Kielbasa
Whip up 8-10 eggs and 1/4 cup milk in a bowl. Add a dash of salt, pepper, dry mustard and tabasco. Pour this over everything and bake in a 350 oven for about 20-25 minutes

I put a roast in the crockpot. We will have mashed potatoes and steamed broccoli for the sides.

I bought some tenderized round steak a couple of weeks ago on sale at our local grocery store and just took it out of the freezer. I am going to make chicken fried steak, baked potato and cold slaw.

I am marinating a pork tenderloin in jerk seasonings. I left out the scotch bonnet pepper because the three year old doesn't like anything spicy. Crazy kid! I will be serving roasted asparagus and rice pilaf with it.

I think I'm having mild stress attacks, I'm short of breath and my back is killing me. I'm keeping it simple for tonight:
Slow cooker pepper steak over rice and gravy
fried cabbage
roasted corn
iced oatmeal cookies for dessert.
