Do to the never ending supply of green olives I'm making Moroccan Chicken again. Plus, I keep trying, but I just don't like bone/skin thighs, I think it's gross.

I pulled out a piece of pork belly this morning that I had put in fridge to defrost Tuesday so I could prep today for dinner tomorrow. After I unrolled and weighed it, realized it was well over twice the size I needed for tomorrow night. So, I cut it into 2 pieces, prepped for tomorrow and went looking for ideas to use the other piece for tonight's dinner. I ended up making a rub of crushed fennel seeds and black peppercorns, plus fresh thyme, garlic, salt, and olive oil. Scored the skin well, massaged the rub in and let it set for almost 5 hours, then slow roasted on a rack for 3 hours, squeezing some lemon juice on it along the way, and added in some chunked potatoes along the way, and finished the meal by steaming some extra broccoli that was in the fridge. Came out quite good.

Or even some very thinly sliced red onions (think mandolin ) soaked in ice water for at least 15 minutes then drained and blotted dry.

Yes, it's all about quick meals on Halloween whether you have a trick or treater or whether you just pass out candy to them. There were probably slightly fewer tricker or treaters than last year, but still several.

Tonight's dinner: Grilled chicken, basmati rice and cauliflower. Drank Red Stripe beer.

Sounds wonderful, Nom. The wings are my fave & my entire family will initiate a stampede to be the first to rip the crispy skin from the bird (to eat). For me... the rest can be used in soup or chicken salad... all I want are the wings (the more burnt the better, cuz I eat the burnt bones, too), neck, gizzards & I'm usually the 1st to get to the crispy skin! I have been known to utter, in my best squinty eyed Clint Eastwood voice, "If you put the baster & tongs down & step away from the crispy bird, no one will get hurt."

Nothing for me... no food all day. Just a bit of espresso & water. I'm too tired & stressed to eat. Had to fire someone so, as the mngr, I have to work those extra 24 weekend hrs, too... no days off for the next 2-wks. They're trying to kill me... I'm 5'7"... if I keep dropping weight & reach 110-lbs, I quit. But, then I'll also look awesome in a bikini while unemployed.
