All I've got energy for is 2 egg yolks & a turkey sausage patty. Got a fridge full of veggies, but too tired to cut up lettuce & peppers. Lots of water to drink.

Happy Halloween, All. Was at work, but didn't see 1 trick-or-treater outside each time I was out, which was 3-4 times... where'd they hide 'em?!! Or, maybe they all dressed as the Invisible Man... in which case... great costumes, kiddos!

I am making vegetarian Enchilladas (spelling) black beans and guacamole salad. Love to do veggie dinners once a week but do not always remember.

Ever make a simple avocado salad with sliced avocado, lime juice, salt and pepper? I find it very tasty and refreshing. Sometimes I'll throw some pickled red onion on it as well.
