If you are into being a cheapskate, like I am, you can save money when you make broth by saving vegetable trimmings in your freezer.

I have a ziplock freezer bag that holds:

onion ends and peels
parsley stems
carrot ends and peels
bits of celery stalks and their leaves
I have put bits of tomatoes in there before too

When I am ready with a full bag I will add them to the frozen chicken carcass I saved in a separate freezer bag, any uncooked giblets that I froze when I roasted that chicken, and I always use some fresh meat too. This time it is going to be turkey necks that I got on sale, because I am not a purist.

Sometimes it is chicken wings and sometimes I don't have a frozen carcass and use a whole fresh chicken like mth does.

* Obviously I throw those vegetables away after they have given their flavor. This is how I make stock, not broth.

The tomatos I usually smash against the side of the pot and they pretty much disapate into the soup. I usually leave some of the veggies in but scoop out the majority. Then I scoop out the chicken, shred the meat, use some for the soup and save the rest for another meal.

Noodles, I use kluski egg noodles. You probably could find them in Michigan. My family lives in Toledo ohio and they send me some regularly. I boil them on their own and add them to the individual bowls.

I use skinless chicken thighs to make chicken soup w/ onions, carrots, celery, salt/pepper, tarragon. I like to add cannellini beans sometimes, ditalini pasta or acini de pepe.

Tonight is going to be very easy and quick!! Bean burritos! Might make up some spanish rice and a green salad to go with it. It's like 75 here today but the wind is crazy! It's also cloudy with rain in the forecast. Then, as Kelsie already said, next week our temps are going back to what's normal for this time of year. I'm enjoying it while it lasts!!
