Meatless Monday. We had an Asian vegetable stir fry with seitan. We used frozen Asian vegetable mix and an easy sweet and sour sauce made with rice vinegar, peanut butter, soy sauce and sesame oil.

We are having wild rice topped with Talapia and a lemon sauce, asparagus and grape tomato salad with beets and I think we will have some roasted brussel sprouts.

I have tofu to use up so something with tofu and another request for kimchi fried rice to go alongside. Off to google ideas.

These days I like to make fast and simple recipes and we love our Indian Cuisine. Tonight I will make spiced eggplant with chapatis,homemade plain yogurt,lassi and an orange salad with unsweetened coconut,roasted almonds and a shot of Cointreau.

1 lb eggplant
3 tbsp olive oil
1 large diced onion
1 thumb thick/length finely cut ginger
4 finely cut garlic cloves
1 tsp chili powder ( depends how spicy YOU like it )
1/2 tsp turmeric
a handful cut up cilantro
1 finely cut green chili ( or you could omit the red chili and use 3 green chili instead)
salt to taste
5 diced fresh tomatoes
sprinkle with cilantro for decoration

Put eggplant under a preheated grill for 15 minutes,rotating eggplant until soft. Than you remove peel and cut dices. Fry onion in olive oil just tender,add ginger/garlic,fry 2 minutes and add eggplant cubes.Sprinkle on top with chili/turmeric/coriander powder,fresh green chili,salt and tomatoes.Fry another 15 minutes until dry and you can serve it with rice ,naan,or chapatis.
* Lately to be faster,I peel eggplant,cut in cubes and boil in water til half soft. Than I drain it in a strainer and cook it that way.

I haven't decided yet but I really want to go with a "Mardi Gras" type supper without the alcohol and fish/seafood.
I'm not sure that is possible so I will have to do some research and make a decision.
