A simple dish: spaghetti with Marinara sauce and I added some freshly chopped basil, parsley and garlic slivers. Topped with a combination of Parmesan and Romano cheeses and a sprinkle of extra-virgin olive oil.
For tonight I am planning to make Italian herb chicken with pasta or boiled potatoes and a mixed green salad. I will use boneless,skinless chicken breast,halved mushrooms,red and green bell peppers ,tomatoes,onions, all diced,oregano,thyme,basil and a pinch of marjoram,salt and tomato paste.I will use a slow cooker,layering chicken breast and all vegetable and ingredients and adding 1 cup of water.I will cook it for 4 hours on high heat and at the end I will make a roux from the liquid left behind. I never made it that way,it was a friend who suggested it to me,so I am going to give it a try. For dessert fresh blueberries with my homemade plain yogurt
Patient may chew:>) Rib eye, linguini with garden peppers/garlic/olive oil, salad, mini peach cobbler and ice cream. HAd the first garden cucumbers last night - delightful!
Mussels in a garlic, white wine and cream sauce, with a fresh, hot baguette to mop up the juice.
Breaded and sauteed aubergine slices as a side.
