I was quite taken by Houston (I have a bunch of relatives who live in the area), while Central Florida doesn't really enthrall me, though I imagine I will end up seeing Disney World before I die.

But given that it's located on the northern edge of Harris County, I think I'll take Spring over Winter Haven.

I'd go with Paris. While I'm not crazy about North Texas, Versailles is just too small.

Lincoln, Nebraska or Davis, California?

Davis... it's a nice college town with a high standard of living. It's 15-20 minutes from downtown Sacramento and just over an hour from the Bay Area. The year-round weather is pretty nice too. If money were not an issue, then it would be an easy choice for me (albeit Lincoln is very decent in many regards).

East Lansing, I know its a college town, but I'd much rather live in Michigan than Indiana.

Reading. Even though I I'd have to get used to the winters, it's economy is better than Beaumont's which is in decline and I've lived there before. Chula Vista CA or Oceanside CA?

Definitely Reading. Seems like a great bargain considering the scenery, urbanity, and proximity to big cities.

Chula Vista looks more urban and inner-ring. No desire for the "resort" vibe in a place to live (or to travel, even).

It doesn't look like there's too much to distinguish these two suburbs from each other, other than their location relative to the main city (SLC). I'm not into suburbs. My preference is to live in a small town or more rural setting; but if I'm going to live in a metropolitan area, I'd prefer to be in the city itself and in an older neighborhood. A far-out suburb has less than zero appeal to me. I think I'd pick West Valley City just because it's quite a bit closer to SLC.
