Well, time for true confessions - the taco salad I had planned for last night got thrown by the wayside...I had family in town and we really tied one on. (several). I put out some cheese and crackers but that was it. I went to bed around midnight but this morning I discovered several things were made in my kitchen last night unbeknownst to me I'm fine with it, as I love to see leftovers get eaten. At any rate, tonight we'll do the taco salads, and I also have some chicken defrosting which I'd love to cook up and then use for dishes this coming weekend.

I have a beef roast in the oven. It will be there for .....whatever! With rice or French bread or potatoes or....whatever!
I just suddenly felt like cooking the roast!
What the *ell.....I've another one on hand anyway.

Tonight's dinner is a little of everything. We have vegetable beef soup, grilled cheese sandwiches, salad with a Vidalia French honey dressing, deviled eggs, and a loaf of French bread. Iced tea to drink. Fruit salad for dessert.

The frig and pantry are getting a little sparse so I use what's in stock. Tonight it will be lentil soup with fresh carrots, potatoes, onions, diced tomatoes, garlic, a bit of leftover pork chop, seasoned with herbs from my garden (basil and parsley), cumin (seeds and ground), and topped with a dollop of sour cream.

Yummy!

Breakfast for dinner: Eggs, broccoli, onions and cheese made into a big frittata, toast with butter and coffee.

Didn't feel like cooking so I went to my local Chinese place to pick up their "appetizer A" plate ... chicken wings, fried shrimp, and boneless barbecued beef. It's enough for 2-3 meals depending on how hungry I am!! What a deal!!

veg night -- steamed golden cauliflower with butter, roma beans with thyme and more butter, mashed potatoes with sour cream & chives (butter in them, but not any extra on them), a tiny piece of fudge, and a banana.
