Really? You think the Night King would have traveled all that way, seen the wall, and just headed back home? Really?!
They were getting through/around the wall one way or another. Having the dragon just made it easier.

Actually, I wondered this myself but with a slightly different twist. Could the mountain be a plant for the Night King, just biding his time until he gets the signal from the Night King to kill Cersei?

Like another poster said, it could have been anything that opened up the way south. I was just trying to point out how the writers once again went for the easy/showy scene without considering the finer points of it.
At this point in the GoT series, don't try to make sense of it, just sit back and enjoy the ride...

The Night King wasn't going to freeze the seawater. The seawater is freezing because it's winter, which means it's extremely cold outside.
